●Yaki Saba Sushi
2 mackerel fillet
toasted laver
400 g sushi rice
some Gari
some Shiitake Fukumeni
6 Shiso leaves
some Wasabi if you like

●Sushi rice
400 g cooked rice
1 tbsp sugar
2 tbsp vinegar
1/2 tsp salt.

●Shiitake Fukumeni
4～8　dried shiitake mushrooms
100 ml soaking liquid from dried shiitake
1 tbsp soy sauce
1 tbsp sake
1 tbsp sugar
