●Ingredients(for 1 serving)
100 g oyster
1 egg
some Kujo-Negi
some white leek
some grated ginger
1 portion udon noodle
350 ml dashi stock
1 tbsp sake
2 tbsp mirin
2 tbsp light soy sauce
1/2 tsp salt
some potato starch mixture
●Thick Dashi Stock.(for 1500 ml)
1800 ml water
10 g giant kelp
30 g Ago
20 g thick bonito flak
20 g dried mackerels and sardine flake
