●材料(5人分)
なす:5本
しし唐:10本
大根おろし:少々
揚げ油:適量

●つゆ(5人分)
酒:大さじ2
みりん:大さじ2
だし汁:300cc
鷹の爪:3本
砂糖:小さじ1
醤油:大さじ3

●濃厚カツオ昆布出汁(1500㏄分)
昆布:10g
鰹節:30g
水:1600cc

●Ingredients(for 5 people)
5 eggplant
10 Shishito
5 shiso leaves
some daikon Oroshi
some oil

●Tsuyu(for 5 people)
2 tbsp sake
2 tbsp Mirin
300ml dashi stock
3 chili pepper
1 tsp sugar
3 tbsp soy sauce

●Rich Dashi Stock(for 1500ml)
10g kombu
30g Katsuobushi
1600ml water
