1 bitter melon（or bitter gourd/goya）
300 g momen tofu
100 g Spam
100 g pork belly
150 ml bonito stock
2 eggs
1 tbsp sake
1 tsp Awamori Chili Sauce
1 tsp light soy sauce
some salt and pepper
some Katsuobushi
