鰹のたたきの手こね寿司(1人前)
 鰹のたたき:100g
 すし飯:230g
 刻み海苔:適量
 錦糸玉子:適量
 ガリ:適量

すし飯(3人分)
 米:2合
 大葉:5枚
 みょうが:1個
 炒り胡麻:適量
 酢:50㏄
 砂糖:大さじ1.5
 塩:小さじ1
 鰹のつけ汁:大さじ3

鰹のつけ汁(3人分)
 酒:大さじ3
 みりん:大さじ2
 醤油:大さじ1.5

ガリ(200g分)
 新生姜:200g
 酢:100㏄
 砂糖:25g
 塩:小さじ1/2

Tekone Zushi(for 1 serving)
100 g bonito Tataki
230 g sushi rice
some Kizami Nori
some Kinshi Tamago
some Gari

Sushi rice(for 3 servings)
2 cup rice(300g )
5 Shiso leaves
1 Japanese ginger
some Irigoma
50 ml vinegar
1.5 tbsp sugar
1 tsp salt
3 tbsp marinade

Marinade(for 3 servings)
3 tbsp sake
2 tbsp ml mirin
1.5 tbsp soy sauce

Gari(200g)
200 g spring ginger
100 ml vinegar
25 g sugar
1/2 tsp salt
