●Tonkotsu Ramen(for 1 serving)
1 portion ramen noodle
300 ml Tonkotsu soup
2 tbsp salt-broth sauce
1 seasoned soft-boiled egg
some Menma
some Char Siu
1 nori seaweed
some spring onion
●Salt-broth sauce.
250 ml kombu dashi
2 tbsp sake
1 tbsp mirin
60 g salt
2 tbsp soy sauce
1 tsp vinegar
●Ramen noodle(3 portion)
160 g bread flour
80 g cake flour
3 g salt
3 g baking powder
80 ml water
●Tonkotsu soup(for 1200 ml)
3 pork bone
some water
●Char Siu
350~500 g pork shoulder
1 clove garlic
80 ml sake
30 ml mirin
50 ml soy sauce
●Seasoned soft-boiled eggs
3~5 egg
30 ml soy sauce
1/2 clove garlic
small piece ginger
1 tbsp sake
1 tbsp sugar
1 tsp oyster sauce
100 ml water
●Menma
150 g bamboo short
1 tbsp sesame oil
200 ml soup
1~3 red chili pepper
2 tbsp sake
2 tbsp mirin
1 tbsp soy sauce
●Back fat
150 g pork back fat
small piece ginger
some green onion
some water
