鯛の刺身、三枚おろし Sea Bream Sashimi|How to Fillet
活き締めの養殖鯛、ちょっと小ぶりな鯛でしたが、とても鮮度が良くて、おまけに安かった!思わず買ってしまい、刺身にしました。養殖鯛は大きくなると脂が凄いですが、これは小さいのでそれほど脂は無いので、半身は皮を引いて薄めに切り、半身は皮目に熱湯をかけて皮霜つくりにしました。お手頃な酒の肴になりました。
Although this farmed sea bream is a little smaller in size, it is so cheap and fresh! I didn’t have any second thoughts when I bought it to prepare some sashimi.
The fatty portion of a farmed sea bream can be really awesome. However, due to this fish’s size, there is not much fat content in it. Due to that, I sliced half the fish into thin slices with the skin removed and scaled the fish skin for the other half. This is best served with Japanese Sake.
