●Chirashi Zushi(for 4~5 people)
 80 g bamboo shoot
 2 eggs
 8 snow peas.
 10 g dried gourd shavings.
 4 dried shiitake mushroom
 1/4 carrot
 1 koya dofu
 50 g Kamaboko
 some Shredded nori/Beni shoga/Ikura
●For the seasonings
 300ml water from re-hydrating mushrooms
 2 tbsp soy sauce
 1 tbsp sugar/mirin/sake
●Sushi rice
 450 g rice
 1 kombu
 a little less water than usual
 75 ml vinegar
 2 tbsp sugar
 1 tsp salt
●Boiled shrimps
 15 shrimps
 3 tbsp sake
 1 tbsp mirin
 80ml dashi stock
●Su Renkon
 50g lotus root
 2 tbsp vinegar
 50 ml water
 1 tbsp sugar
 1 tbsp mirin
 1 pinch salt
 1 kombu
 1 chili pepper
●Hamaguri Ushio-Jiru soup
 250 g Hamaguri
 800 ml water
 1 kombu
 2 tbsp sake
 some salt
 some Mitsuba
