静岡黒おでん♪ Shizuoka Dark Oden♪

How to make Shizuoka Dark Oden.
Oden (おでん) is a Japanese one-pot dish consisting of several ingredients such as boiled eggs, daikon, konjac, and processed fishcakes stewed in a light, soy-flavored dashi broth.

●Dark Oden(for 3~4 servings)
400 g beef tendon
2000 ml water
2 tbsp soy sauce
your favorite Oden ingredients

●Oden soup
2000 ml kombu stock
30 g dried mackerel and sardine flake
2 tbsp sugar
2 tbsp mirin
2 tbsp sake
100 ml soy sauce
1000 ml beef tendon broth

●Black Hanpen(for 6 pieces)
160 g fish paste
3.2 g salt (2 % of fish paste)
16 g sugar (10 % of fish paste)
24 g potato starch (15 % of fish paste)
32 g cold water (20 % of fish paste)

●Oden Powder
some Aonori
some Kezuriko
