●Oyster Nanban Soba Noodle(for 2 servings)
140 g oyster
1/2 white leek
some mitsuba
2 bundles soba
650 ml kombu dashi
50 ml Kaeshi

●Kaeshi(for 220 ml)
160 ml soy sauce
20 g granulated sugar
60 ml mirin
