●Chikuwa.
300 g whitefish
1 tbsp egg white
6 g salt
1 tbsp sake
2 tbsp potato starch

●Isobe-age
4 chikuwa
1/2 beaten egg
40 ml cold water
20 g flour
10 g potato starch
1 piece ice
2 tbsp green laver

●Tartar sauce
1 boiled egg
1/8 onion
some mayonnaise
some salt and pepper
some Parmigiano-Reggiano
some dried parsley

●Kimpira gobo
100 g burdock
50 g carrot
2 tbsp sake
2 tbsp mirin
1 tbsp soy sauce
1 tsp sugar
1 tbsp sesame oil
some sesame seed
some chili pepper

●Okaka
15 g dried‐bonito shavings
1 tbsp soy sauce
1 tbsp mirin
1 tbsp sake
1 tsp sugar

●Sakura Daikon
200 g Japanese radish
200 ml water
4 tbsp plum vinegar
some Beni Shoga
